Chipotle-Marinated Beef Flank Steak
I beef flank steak (about 1-112 to 2 pounds) Salt to taste
Marinade: 113 cup fresh lime juice 114 cup fresh cilantro, chopped I tablespoon packed brown sugar 2 teaspoons chipotle chilies in adobo sauce, minced 2 tablespoons adobo sauce (from chilies) 2 cloves garlic, minced 1 teaspoon lime peel, freshly grated
Combine marinade ingredients in small bowl; mix well. Place beef steak and marinade in food-safe plastic bag; turn steak to coat. Close bag securely and marinate in refrigerator 6 hours or overnight.
Remove steak from bag; discard marinade. Prepare charcoal grill fire. Place steak on grill over ashcovered coals. Grill, covered, 11 to 16 minutes (or over medium heat on preheated gas grill, 16 to 21 minutes) for medium rare (145 degrees) to medium (160 degrees) doneness, turning occasionally.
Carve steak across the grain into thin slices. Season with salt, as desired, and serve.
Note: Most salad dressings make a wonderful marinade substitute if you don’t happen to have marinade ingredients on hand. Remember that for a marinade to truly work its magic, it’s best to allow the meat to soak in the mixture (in a non-metallic container) for several hours or overnight to absorb the flavors as well as tenderize.
